NUNO QUEIROZ RIBEIRO

He is a chef specialising in healthy eating, an old passion. Nuno Queiroz Ribeiro is 40 years old, the only Portuguese chef with a distinction of merit from the Ministry of Health and the first one to have ever been invited to a symposium of the World Health Organization, where he promoted the Mediterranean diet.

He is currently a professor at the Lisbon School of Hotel Management, responsible for food at the Redbridge School in Lisbon, and a consultant.

He spent time abroad as part of his evolution as a chef. He studied in London at Le Cordon Bleu, passed through Italy and opened his first restaurant in Beirut, pioneering in vegetarian, vegan, macrobiotic and organic food.

Back in Portugal, he opened a catering company devoted to major events, he was co-founder of Healthy Growing, CML Education (Lisbon City Council) and he has taken part in television programmes such as SIC's Peso Pesado and Dr. White. According to Nuno: “I think that being a chef is one of the professions that has the greatest responsibility. We feed people (...) and only with great conscience (...) can we make available a responsible range of food from all kitchens (...)"

Nuno is the moderator of the "Consciousness" panel and he invites people from all over the world to discuss food consciousness with pleasure, tackling the state of the art and addressing what we can do.
